A cake recipe for all foodies:

For the dough, cream butter, egg yolks, sugar and vanilla sugar, add flour and baking powder, mix well.

Divide the dough in half. Press half into a greased cake springform pan (28 cm ø), prick with a fork.

For the meringue amount, whip egg whites with a pinch of salt until stiff, mix in 300 g sugar.

Spread half evenly on the dough and bake at 175 °C for 20 minutes.

Proceed in the same way with the rest of the dough and the meringue.

Whip the cream with the cream stiffener until stiff. Then fold in the well-drained mandarins (halve once for large wedges).

Spread the mixture evenly on one cake layer. Divide the other cake into 16 pieces and place them on top of the mandarin cream.
