For the crumpet, cream butter and sugar with the eggs. Put barberries, raisins and rum in a microwave container and heat briefly so that the dried fruit soaks in with the rum.

Cool slightly and add to sugar mixture, mix flour with baking powder and also add to sugar mixture, add coconut flakes, mix everything well with a pastry spatula.

Grease loaf pan and sprinkle with flour, pour in batter and smooth out. Bake in the oven preheated to 170 degrees on the lowest shelf for about 50 minutes.
