For the Thai shrimp soup, first peel the garlic. Chop the coriander root. Clean and quarter the tomatoes. Pluck off the coriander greens and chop coarsely.

Finely grind the coriander root and garlic with salt and pepper.

In a wok, heat the oil and lightly fry the coriander-garlic paste. Add sugar and stir well until sugar dissolves. Pour in the fish sauce, fish stock and tomatoes and cook for about fifteen minutes. Then add the shrimp and finish simmering for a few minutes.

Serve the Thai shrimp soup sprinkled with coriander greens.
