Cut the cutlets into three pieces each. Remove the skin from the onions, halve them and cut into slices.

Season the meat very strongly with salt and pepper, then heat the fat in a frying pan and fry the meat very hot. Now remove from the frying pan and cook the onions in it.

Put a layer of meat in an ovenproof dish, season with thyme, cover with onions and pour whipped cream over it. Add more layers to the dish with remaining meat and onions and pour as much whipped cream until the whole is covered.

Put the dish in the refrigerator for 24 hours. Place in a cold oven, heat to 150 °C and cook for 2 1/2 hours.

Tip: Instead of clarified butter, you can also use butter in most cases.
