Rinse the lentils in a sieve and drain. Peel the onions and dice very finely. Pluck the thyme leaves and chop. Mix fruit vinegar with pepper, salt, honey and olive oil. Mix with thyme, onions and lentils.

Cut the chicory in half lengthwise and remove the wedge-shaped stem. Cut halves into 2 cm wide strips. Rinse radicchio and cut into 12 cm strips. Clean, rinse and spin dry romaine lettuce. Cut leaves into 2 cm thick strips. 3.

Mix the lettuce with the lentils just before serving. Serve with ciabatta bread.

Tip: You can toast the bread cut into slices under the oven grill. Later rub with a clove of garlic and drizzle with olive oil.
