Instructions:

Preheat oven to 220 °C.

Season the rabbit with salt and pepper.

Remove peel from carrots and cut diagonally into slices about 1.5 cm wide. Remove peel from garlic and shallots, halve garlic cloves, quarter larger shallots, halve smaller ones.

Put one tablespoon of oil in the roasting pan, put the rabbit on it and pour the second tablespoon of oil over the meat. Put the roaster in the middle of the oven and roast the rabbit for 15-20 min.

Reduce heat to 180 °C, add carrots and shallots to the meat, deglaze with wine and soup, add bay leaves and juniper berries.

Sauté the rabbit for about 40 minutes, pouring a little gravy here and there and adding a little soup if necessary.

10 minutes before the end of the cooking time, place the thyme sprigs on the meat.

Bake the Mc Cain fries according to instructions in the stove (next to the meat or with convection oven on separate baking sheet).

Arrange meat and vegetables, pour a little jus, add frites to table.

For 2 people: halve ingredients, but use the same amount of liquid for stewing.
