Instructions:

Grind the green spelt medium fine and let it swell in the water for one hour. The water should be absorbed completely. Cut the tofu into small cubes. Wash, peel and grate the potatoes. Wash and grate the zucchini. Finely chop the herbs. Mix the green spelt with the vegetables and herbs. Add the egg and the tofu. Add enough flour so that the mixture can be easily formed into loaves. Season well and shape into equal-sized loaves. Wash the tomatoes and cut them into wedges. Peel the onion and chop into small cubes. Mix vinegar, oil and mustard well in a bowl, dilute with a little water and season with salt, pepper and sugar. Mix in tomato wedges and onion. Heat the oil in a frying pan.
