Instructions:

Peel and finely dice the onion. Heat the oil and sauté the onion and ginger in it.

Add the diced tomatoes, grated potato, soup powder, pepper, sugar and water and boil gently for 15 minutes.

Puree the soup with a hand blender and add salt if necessary. Garnish with finely chopped spring onion.
