Instructions:

For the tomato roast the meat first wash, salt and pepper.

Fry in hot fat with coarsely chopped greens and add the coarsely chopped onion. Wash and tear tomatoes, bring to boil with 1/8 l water, cover and stew until soft, strain and pour to meat.

Add 1/2 bay leaf, thyme, peppercorns and some finely chopped lemon peel and braise slowly in the oven, covered, for 1 1/2 to 2 hours. When the meat is tender, remove the roast and keep warm. Strain the juices. Mix the flour with white wine until smooth and simmer in the juice.

Serve tomato roast with sauce.
