For the Roast Saddle of Venison in a Net Spread out a well-dried pork net and cover an area of about 25 x 20 cm with blanched (scalded) spinach leaves dabbed dry.
Spread with half of the farce. Season raw fillet well with salt and pepper and place on top of farce. Spread in-between spaces with farce and roll up well in the pork net.
Fry carefully all around in not too hot fat. Place in a roasting tin and roast in the oven at 150-180°C for approx. 1 hour. After that, let the loin rest in the net for a short time and cut it open with an electric knife.
