Cut turkey breast evenly (about 1 cm thick), season with salt and pepper. Season spinach leaves with salt, pepper, grated nutmeg and garlic. Cut mozzarella into ½-cm slices.

Top turkey breast with spinach leaves, ham and mozzarella and roll into a roulade. Tie together with spaghetti. Cook the roulade in the oven at 200 °C for 90 minutes. Remove the cooked turkey roulade from the roasting dish and keep warm. Stir the roast residue with Fixeinbrenn, thicken a little with butter and QimiQ. Season to taste with salt and freshly ground pepper.

Remove the skin from the potatoes, cut into quarters and soften in salted water. Heat butter in a frying pan, sauté potatoes briefly, season with salt and chopped parsley.

Cut roulade into slices, serve with parsley potatoes and juice.
