Instructions:

For turkey cutlets with zucchini, cut turkey and brown with oregano in clarified butter.

Add crushed garlic and season with salt and pepper. Remove from pan and keep warm. Dice zucchini and sauté in the drippings.

Add lemon zest. Deglaze with wine and steam in the open pan for 3 minutes. Add meat and bring everything to the boil once.

Season to taste with salt and pepper. Sprinkle turkey with zucchini with parsley to serve.
