Pasta dishes are always a good idea!

Preparation Beat eggs and mix. Peel the orange peel with a zester, finish peeling the orange with a small kitchen knife and fillet it. Cook pasta in salted water until al dente, drain when cool.

Season turkey medallions with salt and pepper, flour, pull through egg and turn to other side in coconut.

Heat frying pan with clarified butter and a tiny bit of canola oil, fry medallions on both sides until golden brown. Briefly sauté orange peel in heated butter, extinguish with orange juice, add brown sugar, roll lightly, pour in whipping cream, reduce slightly, season with salt and pepper.

Fry noodles in hot clarified butter, add saffron, turn briefly to the other side, fold in orange fillets, pink bush berries and season with salt and pepper.

Arrange pasta evenly on plates, pour sauce all around, place medallions on top and garnish with lemon balm.
