For the Tuscany sandwich, first toast the pine nuts in a pan without oil until they take color and become fragrant. Take them out and let them cool down.

Cut the bread into 4 equal pieces and slice them diagonally.

Cut tomatoes into fine cubes. Cut goat cheese into slices. Rinse arugula, spin dry and pluck. Cut olives into rings.

Drizzle bottom halves of bread with olive oil. Top with olive rings, arugula, diced tomatoes and goat cheese. Sprinkle pine nuts on top. Place upper halves on top and serve Tuscany sandwich.
