For the Tyrolean dumplings, chop the rolls, soak in a little milk, season lightly with salt. Chives (finely chopped), bacon, country ham, salametti and cervelats all together finely chopped mix with flour.

Fold in the eggs and mix well. Form dumplings with a little flour and let them steep in beef broth for about 5 minutes.

Serve the Tyrolean dumplings with beef soup or as a side dish.
