For the vanilla cookies with chocolate, preheat the oven to 180 degrees. Beat the butter and sugar until well fluffy, then add the egg and some vanilla essence and stir in.

Mix the flour, cornstarch and baking powder together and sift in batches to the butter foam and stir or knead in. Roll out the dough to a thickness of 3 mm and cut out cookies with a cookie cutter.

Place the cookies on a preheated baking tray and bake in a preheated oven for 15 minutes until golden brown. Let the baked cookies cool on a cooling rack.

Melt the couverture and coat the cooled cookies with it.
