For the cream of pumpkin soup, peel and chop the onion, fry in oil. Dice the pumpkin, remove the seeds and fry with the onions a little more.

Then add the ginger and chili. When everything has taken a little color, pour in coconut milk and vegetable broth and stew the pumpkin until soft.

When the pumpkin is soft, puree the whole thing, season with salt and pepper and serve the pumpkin soup.
