Instructions:

Cut peaches into cubes. Puree half of the cubes. Add coconut milk and soy drink, carefully fold in remaining cubes and sweeten to taste.

Make into ice cream in an ice cream maker or freeze in the freezer, stirring once every 30 minutes (about 3-4 times, then it’s frozen solid). Serve the vegan ice cream with soy cream.
