For the vegan pancakes, mix the dry ingredients (flour, cinnamon, baking powder and salt) in a mixing bowl.

Blend the milk, banana and maple syrup in a blender or with a hand blender. Add the milk mixture to the dry ingredients and mix well until a slightly thick batter forms.

Add as much mineral water until the batter has the ideal consistency. Bake the vegan pancakes in a frying pan.
