For the vegetable stew, finely slice the onion and dice the vegetables and meatloaf. Fry the onion in a little oil, add the peppers and the meat loaf and fry briefly.

Add zucchini and mini cucumbers, deglaze with a little soy sauce and add 2 to 3 tablespoons of ajvar according to taste. Allow to steam briefly, make two indentations with a spoon and carefully slide an egg into each.

Leave to stand until the egg white sets and serve.
