For the vegetables in Greek, clean and wash zucchini, peppers, green onions, carrots and tomatoes. Remove seeds from peppers.
Cut zucchini and carrots into 1 cm thick slices. Cut bell bell pepper into strips. Cut green onion into rings. Strain or puree tomatoes.
Put everything in a bowl and season with salt, pepper, marjoram and oregano. Simmer in a little olive oil over low heat for half an hour.
Dice the feta cheese and add to the Greek vegetables just before serving.
