For the borscht, fry the chopped onion in clarified butter until translucent, add beet, cabbage leaves and carrots. Season with soup powder, pour in just under ¼ l of water and cook until soft. Finally, add garlic, smoked tofu and maple syrup, season with salt and pepper.
