For the venison steaks, brush the venison steaks all over with oil.

Crush juniper berries, thyme and peppercorns in a mortar, rub the meat with it and cover and refrigerate for half an hour.

Heat clarified butter and sear the steaks in it for 3 to 4 minutes on each side.

Arrange the venison steaks with any garnishes and serve.
