Place the rice paper sheets on top of each other in pairs (because otherwise they tear easily). Spray with tap water and soak. If they are not processed on the spot, be sure to cover them with wet towels, they must not dry up in any case!

Rinse the glass noodles with boiling hot tap water and soak in effectu.

Rinse the leaf lettuce, kitchen herbs and bean sprouts. Separate the cucumber from the peel, cut in half lengthwise, pit. Slice the cucumber flesh into matchstick-sized strips. Slice the onion into very thin rings.

Cut the meat diagonally to the grain into narrow slices, cut these lengthwise into strips, rub with cornstarch.

Heat oil until hot, brown the meat while stirring throughout, now immediately add ginger, garlic and onion slices. Add the drained glass noodles, shortened with scissors if indispensable. Roast everything on a strong fire and now whisk. With the spices vigorously give some more flavor and let it quench with the liquid.

Put 1 large or alternatively 2 small lettuce leaves on each rice paper. Put some cucumber strips, kitchen herbs, bean sprouts on top and put a little bit of the noodle-meat filling on top.
