For the Vogerlsalat with parsley root and bacon wash the Vogerlsalat and let it drain. Peel and wash the parsley root and cut into thin slices.
Fry in olive oil for about 5 minutes, add bacon and fry as well. Mix the ingredients for the dressing until you get a creamy consistency (e.g. in a shaker).
Arrange the salad in deep plates, place the parsley root and bacon on top and pour the dressing over it.
