For the sausage dumplings, sauté the chopped onions in the oil, add the parsley and sauté briefly.

Mix the dumpling bread with the sausage meat and the eggs, add the onions and parsley. Season everything well.

Mix in the flour. Let the mixture rest for about 20 minutes.

In a large saucepan, bring salted water to a boil. Form dumplings with wet hands, press them together so that they do not fall apart.

Put a test dumpling in the water. If it falls apart, add more flour and some breadcrumbs to the mixture.

Cook the dumplings in low boiling water for about 20 minutes.

Then let them steep in hot soup for a while and serve the dumplings.
