Instructions:

Remove the skin from the celery, cut it raw into very fine strips (or cook it on the stove until al dente and then cut it into small pieces). Remove the skin from the apples, remove the core and cut into small strips. Peel and finely chop nuts, set aside a few for garnish.

Season the mayo with salt and the juice of one lemon, whip the cream and add it to the mayo or mix it with the mayo without whipping.

Mix ingredients with dressing, pour into salad bowl, top with remaining walnuts. Allow to cool for 2 h before serving.

Info/History:

John Jacob Astor (1763-1848) from the village of Walldorf near Heidelberg emigrated to America as a young man and acquired a huge fortune through fur trading and land speculation.

One of his activities was the construction of the Waldorf-Astoria Hotel in New York, a huge “palace of hospitality” with 1300 rooms.

It was in the kitchen of the Waldorf-Astoria that this leaf salad was invented. In its classic form, it consists only of raw celery and apple strips with chopped walnuts and mayo. Here and there, however, one also comes across Waldorf salad with oranges and chicken or other additions.

Tip: Lemons add a fresh touch to dishes. Consciously choose ripe, rich yellow lemons!
