For the Waldviertler dumplings, boil 1/2 kg of potatoes the day before, peel them and put them on a plate to dry nicely.

The next day, grate another 1/2 kg of raw potatoes into a bowl with a little cold water. Then squeeze this with a cloth and mix with the potatoes cooked and dried the day before.

If you squeeze the potatoes in the cloth, the squeezing water will clear and the starch from the potatoes will settle to the bottom. Therefore, carefully pour off the clear water and add the starch to the potatoes. Add salt and knead into a dough.

Form dumplings from this dough and boil them in plenty of salted water for about 20 minutes. After 10 minutes, carefully turn the dumplings over.

Remove the finished Waldviertler dumplings from the water, drain and serve hot.
