Instructions:

Cut the lemon peel as thinly as you can, preferably in one piece, so that there is as little of the white as possible. Place in a large pitcher, squeeze the juice of two lemons, add a bunch of mint (if you can’t get fresh mint tea, use good dry mint tea) and cover with apple juice. Chill and infuse for about an hour. Shortly before serving, fill up with wheat beer.
