For white lime gnocchi, rinse one lime hot and rub dry. Grate the peel, squeeze all the limes.

Soak gelatine in cold water and squeeze out well. Heat the liquid cream and dissolve the gelatine in it.

Melt the white chocolate in a water bath and stir in the gelatine cream. Add lime juice and zest.

Beat the egg whites with sugar until stiff and carefully fold into the chocolate mixture. Now fold in the whipped cream. Cover and refrigerate the mixture for at least 4 hours.

For the sauce, sort out the raspberries and bring to the boil with orange juice, lime juice and honey. Simmer for 3 minutes, then strain through a hair sieve.

Cut out dumplings from the chocolate mousse with the help of two tablespoons and arrange them on dessert plates.
