Instructions:

For the white wine soup with thyme, first peel the shallots and cut them into small cubes.

Heat the butter in a pot and sauté the shallot cubes until translucent. Add the thyme (either put in whole sprigs or pluck and put in tea bags). Deglaze with the wine, then pour in the stock and let it steep. Taste again and again until the desired intensity is reached.

Fish out the thyme sprigs again and strain the soup. Add the whipped cream. Season to taste with salt and pepper and thicken the white wine soup with thyme with cornstarch or butter.
