Instructions:

For the wholemeal couscous salad, pour double the amount of boiling water over the couscous and leave to soak for 10min. Quarter the tomatoes, halve the leek and cut into thin strips.

Add to the couscous together with the yogurt. Squeeze the garlic clove and add to the couscous with the lemon juice and spices, mix well.
