For the whole spelt pastry, mix the flour with the salt, crumble the yeast in a hollow and mix coarsely with sugar, olive oil and the water. Let rest for about 10 minutes.

Now knead into a smooth dough and then let rest covered for about 45 minutes. The dough will double in size.

Form a roll and cut off pieces of equal size, shape pastries as desired. Brush with water and sprinkle with caraway seeds, salt, pumpkin seeds, poppy seeds or sesame seeds and bake the whole spelt pastry in a preheated oven at 200 degrees for about 15-20 minutes.
