Instructions:

For the whole wheat pancakes, mix the whole wheat flour with salt, Italian herbs, 2 eggs, milk and olive oil.

Let the dough rest for about 30 minutes. Then bake 8-10 pancakes. Mix spinach with garlic and salt. Cut salmon into small pieces.

Mix egg white with salmon pieces, lemon juice and 5 tablespoons of cream. Preheat oven to 200 degrees top and bottom heat.

Spread some spinach filling on each pancake. Place the salmon filling on top, roll up and place side by side in an ovenproof dish.

Mix egg yolk with 5 tablespoons of cream and Gouda. Season with pepper, nutmeg and salt and spread on the pancakes.

Cut the cocktail tomatoes crosswise and put them on the pancakes. Bake the wholemeal pancakes for about 25 minutes.
