Instructions:

Wild ducks well rub inside and out and sprinkle with salt. Remove the skin from the onions and apples. Cut onions into cubes, apples into quarters, core and cut into cubes in the same way. Rinse raisins in a sieve and drain. Mix apples and onion cubes in a baking dish with raisins and rum. Fill ducks with it. Plug opening with toothpicks. Brush ducks with oil. Place in a roasting pan and put in the heated stove on the middle rack.

Roasting time: 70 min at 200 °C . Take out, disassemble and arrange on a heated plate . Boil off the gravy with sherry, orange juice and water. Pour through a sieve into a saucepan. Heat. Stir cornstarch in a cup of cold water and thicken the stock with it. Bring to a boil. Season with salt, pepper and orange jelly and pour into a sauce boat.

Peel the oranges, remove the white skin and cut into fine slices. Serve the duck with the orange slices and garnished with the washed , dabbed dry cress leaves. Serve with: Brussels sprouts and duchess strawberries
