For the wild garlic curry soup with ginger and coconut, peel the potatoes and cut into cubes.

Peel the ginger, cut into small cubes and roast in hot rapeseed oil. Roast the curry powder briefly. Deglaze with the soy sauce. Add vegetable soup and coconut milk.

Add potato cubes and chili powder and simmer for 10 minutes until potatoes are soft. Add the wild garlic and puree with a blender, do not cook further.
