For the wild garlic Schupfnudeln cook the potatoes until soft. Peel while still hot and press through the potato press. Rinse the wild garlic leaves with cold water, spin dry and chop finely. Sprinkle the work surface with flour and quickly knead all ingredients into a dough. Form the dough into rolls about 2 cm thick and cut into centimeter-wide pieces. With floured hands, roll into Schupfnudeln and place in boiling salted water. Reduce heat and let the Schupfnudeln cook for about 6 minutes. Strain and toss the wild garlic Schupfnudeln in melted butter.
