For the venison skewers, first prepare the marinade. To do this, finely crush peppercorns and juniper berries in a mortar, finely chop sage leaves. Mix all ingredients in a bowl.

Rinse the venison fillet with cold water and pat dry. Cut the meat into approx. 4 x 4 cm cubes and place in a large bowl.

Clean mushrooms – if necessary – dry, cut larger ones in half, dice the pancetta. Add to the meat. Add the marinade and stir well. Cover and leave to marinate for 20 minutes.

Thread meat, bacon and mushrooms alternately onto skewers. Prepare the grill for indirect heat. Grill the venison skewers with the lid closed – the meat should still be tender pink inside.
