For the witch’s herb dumplings, knead the eggs, milk, chopped herbs and flour with a food processor.

The dough should be firm enough to be difficult to pull off the mixer bars. Cover the dough and let it sit for 10 minutes.

Put on a large pot of water and salt. When the water boils, lower heat slightly.

Using 2 tsp, form dumplings from the dough and drop them briskly into the water.

The gnocchi will take about five minutes to float merrily on top. Skim off the witch’s herb gnocchi, rinse with cold water, pepper and salt if necessary.
