For the zucchini chutney, wash the zucchini well and cut into cubes. Place the zucchini cubes in a bowl, salt heavily and set aside.

Wash the green peppers and cut them into thin rings. Peel and finely dice the onion and garlic.

Heat oil in a pot, add onions, garlic, zucchini and pepperoni and heat briefly. Deglaze with the vinegar and add the jelling sugar, salt and pepper. Bring everything to a boil once and simmer on the stove for about 1/2 hour, stirring frequently. Just before bottling, carefully stir in the sage leaves so they don’t break.

Meanwhile, boil the jars in hot water and let them dry. Pour the zucchini chutney into the sterile jars, seal airtight and store in a cool place.
