Instructions:

For the zucchini soup, wash and clean the zucchini and cut into small cubes. Peel the onion, chop finely and fry in hot oil until translucent. Fry the zucchini briefly, add stock and cook for about 10 minutes.

Remove two ladles of zucchini cubes from soup, puree remaining soup and add zucchini again. Season soup with salt and pepper, bring to a boil again and stir in herbs.

Serve the zucchini soup.
