For the Zucchini Tomato Soup with Whole Grain Croutons, place tomatoes in a pot and cover with boiling water. Skin the tomatoes and cut into cubes.

Cut the washed and cleaned zucchini into sticks, leaving one zucchini whole. Sauté the peeled and finely chopped onion and garlic in oil. Add tomatoes and let them stew for a few minutes.

Add vegetable soup and creme fraiche. Season the soup with salt, pepper and brown sugar and let it boil. Stir in the zucchini cut into sticks and cook for 2 minutes.

Grate the zucchini set aside, finely chop the parsley and stir in. Cut the whole wheat toast into cubes, toast gently in a pan and add to the zucchini and tomato soup when serving.
